The chocolate strawberries are a departure from typical Easter holiday treats packing lots of flavor, visual appeal, and an optional buzz. Gather these ingredients:
4 ounces cream cheese, room temperature
2 tablespoons confectioners’ sugar
1-2 tablespoons amaretto (can use 1-2 teaspoons almond extract for non-alcoholic version)
8 large fresh strawberries
1 cup chocolate chips
3 tablespoons heavy cream
1 tablespoon coconut oil
1 tablespoon Bailey’s Irish Cream (optional)
Optional Easter toppings – nuts, sugar or coconut & pastel frosting (either store-bought or homemade)
Using a small knife or corer, lightly hollow out the strawberries and place into the fridge. For the filling, mix cream cheese, powdered sugar and amaretto together until smooth. Load a pastry bag with the mix and fill each strawberry, then refrigerate for at least 30 minutes while preparing chocolate.
Next, heat the chocolate, cream, coconut oil, and Bailey’s in the microwave until the chocolate is fully melted, stirring each minute until smooth. Slightly cool chocolate, then evenly dip the stuffed end of the filled strawberries into the chocolate to seal in the filling. Add any toppings while the chocolate is still tacky, refrigerate for at least 30 more minutes, pipe pastel buttercream designs onto the strawberries and chill until ready to serve.
