They’re being described as the 10 most influential restaurants to launch food movements around the world.

Editors of Budget Travel magazine have come up with a list of 10 trendsetting, international eateries which have helped shape the culinary landscape by introducing diners to concepts like New Nordic cuisine, gastropub fare, and local foods.

While the list is US-heavy, with six of the 10 restaurants hailing from America, other eateries mentioned include addresses in Copenhagen, Paris and London.

The list is different from other ‘best of’ lists like Restaurant magazine’s World’s 50 Best Restaurants, which shares just one name in common — Noma in Denmark.
